Carstens Amsterdam

A brand new concept created by Maik Kuijpers is coming to Amsterdam early 2019.

Maik Kuijpers, the former chef at restaurant De Librije*** has created a brasserie that is approachable and relaxed, focusing on honest food and local produce without any frills available for everyone to enjoy, day in day out.

Ingredients from Dutch soil served with a creative twist. The daily management will be run by Restaurant Manager, Timo van der Stad and Head Chef, Rick van der Meij.

The Menu

The Carstens menu will focus on keeping produce as local as possible, with ingredients from the North Sea to the Veluwe, as well as many ingredients grown and reared at the Lindenhoff farm in Baambrugge. Dishes include North Sea Sole baked in brown butter as well as a classic Caesar Salad with organic kale. Seasonality is a key focus at Carstens offering hearty yet refined dishes. The drinks will have Dutch heritage with an extensive list using local winemakers and neighbouring breweries.


The name Carstens is inspired from the Carstens family who lived and worked in one of the small houses adjacent to the hotel, Park Plaza Victoria Amsterdam in the 19th century. This brasserie is a collaboration between Maik Kuijpers and Park Plaza Victoria Amsterdam.
