Cluster Executive Chef - Carstens & ARCA

 

We’re looking for a Cluster Executive Chef to lead a diverse and high‑performing culinary operation across two prominent hotels. This role oversees a wide portfolio of F&B outlets. You will also guide breakfast operations for both hotels, Meetings & Events catering, Caffé, in‑room dining, and several additional F&B venues across Park Plaza Victoria Amsterdam and art’otel Amsterdam.

What You’ll do
  • Develop, implement, and continuously refine menu concepts and culinary direction for two unique restaurant identities: Carstens and ARCA. 
  • Lead R&D, menu tastings, seasonal rollouts, and special culinary events. 
  • Ensure culinary concepts remain commercially viable, competitive, and aligned with brand positioning. 
  • Oversee day‑to‑day kitchen operations across both outlets, ensuring consistency, quality, and compliance with health & safety standards. 
  • Establish and maintain culinary SOPs, recipes, plating guides, and quality benchmarks. 
  • Drive efficiency through cost control of food, labor, and kitchen resources. 
  • Lead, inspire, and mentor kitchen teams across both venues. 
  • Coach team members through performance reviews and career development plans. 
  • Manage culinary budgeting, including food and labor costs. 
  • Monitor revenue performance and adjust menus and pricing accordingly. 
 
Are you the perfect match? 
  • You have 5 to 7 years' experience as an Cluster Executive Chef in relevant restaurants or hotels. 
  • You have experience managing multiple outlets or complex culinary operations. 
  • You have a strong understanding of European culinary trends; experience with Dutch, Portuguese, or Asian cuisines is a plus. 
  • You speak fluent English; Dutch is a plus. 
  • You have experience managing key stakeholders—from suppliers and F&B leadership to cross‑department teams—ensuring smooth communication and operational alignment. 
  • You bring solid expertise in overseeing kitchen budgets, forecasting, and food‑cost management, consistently achieving financial targets.
