Your responsibilities as a Senior Pastry Chef de Partie will include:

- Assist the Executive Chef and Sous Chef in the design and preparation of the set menus and “plat du jour”.

- Assist the Sous Chef in the daily ordering of all non-food and food dry items.

- Assist the Sous Chef in managing food stock including carrying out month end stock take.

- Support the Sous Chef during service in carrying out all tasks from opening to closing.

- Able to assume the duties of the Sous Chef in their absence.

- Assist with on the job training sessions in conjunction with the Executive chef.

We are looking for

The ideal Senior Pastry Chef de Partie will:

- Maintain food quality and presentation

- Ensure that recipes are correctly prepared and presented as per Executive chef / Sous chef & PPHE International quality standards

- Assist with development of new menus for A la carte restaurants, banqueting facilities & room service.

- Assist with maintenance of HACCP food safety standards through documented procedures

- Ensure proper food storage & sanitation

- Prepare mise en place & replenish food stock ensuring minimum wastage

- Minimize waste & spoilage by correct use of product & proper ordering & sharing of mise en place with other team members

- Be aware of kitchen costs and helps reduce excessive energy costs while ensuring optimum productivity

- Be conversant in all sections of the kitchen i.e. starter, meat, fish and pastry sections.

- Ensure the high standards of quality & presentation by assisting during production & service time either in the kitchen or on the pass.
